About Our Food Truck
Who we are and why we are here
Upon moving to Colorado, we noticed a lack of proper or authentic tasting Louisiana style cuisine throughout the state. In order to satisfy our cravings for this type of food, we had to cook at home. We threw Mardis Gras parties and invited all of our close friends over to enjoy company with and also to enjoy southern comfort food with. From there, we saw a demand that wasn’t being met.
With our decades of experience in the restaurant industry, in 2020 decided to take the plunge into the venture that would be known as Gator Tails. We were slowed down by the Pandemic and subsequent economic events, but we are now at the stage where we can finally share our menu offerings with Front Range Coloradans with our new food truck.
We specialize in stew & roux style sauces over rice, as well as Po’Boy sandwiches that will make your mouth water at every bite. Our business model is aimed to cater small to medium events like business meetings or engagement parties, as well as large events like music and arts festivals or farmers markets. We have built this business with high demand in mind, so we can deliver and satisfy for any event we are hired to procure.
